Pair your wines with the seasoning used in your dish, not the protein.
Fish doesn't necessarily pair with white wine! For example, pair blackened salmon or sea bass with a Pinot Noir. The wine will not overpower the fish, nor will the fish overpower the wine. It's a perfect complement.
